The trickiest part of mornings in India isn't the traffic - it's the chai. This recipe gives you both the spice fix and the fuel in one jar. Make it the night before, wake up sorted.

Ingredients
- 1 sachet Tapri Chai Masala
- ½ cup rolled oats
- ¾ cup strong brewed black tea (slightly cooled)
- 3 tbsp thick curd or yogurt
- 1 tbsp chia seeds
- 1 tsp honey or jaggery powder
- Handful of dry fruits (kismis, almonds) to top
Preparation
- Brew strong black tea in ¾ cup water. Open your Tapri Chai Masala sachet and stir it in while hot. Let it steep for 2 minutes, then let it cool slightly.
- In a jar or bowl, combine oats, chia seeds, curd, and honey. Pour the spiced chai over everything and mix well.
- Cover and refrigerate overnight (or for at least 4 hours).
- In the morning, top with dry fruits, a drizzle of honey, and a pinch of cinnamon. Eat cold straight from the jar.
Tip
The fennel and cardamom in the masala get sweeter overnight as they infuse into the oats - your breakfast will taste more complex in the morning than it did when you mixed it. Don't add sugar until you taste it first.
