Chia seeds have been trending in Indian health circles for years. Haldi doodh has been trending in Indian homes for centuries. This recipe is simply the two having a conversation they should have had earlier.

Ingredients
- 1 sachet Nani's Haldi Doodh
- 1½ cups warm milk (dairy or oat milk)
- 4 tbsp chia seeds
- 1 tsp honey or maple syrup
- Fresh fruit, mango cubes, or pomegranate to top
Preparation
- Warm 1½ cups milk. Open the Nani Haldi Doodh sachet and whisk it in thoroughly until golden and smooth. Add sweetener and let it cool slightly - you want warm, not hot.
- Stir in chia seeds. Mix well so no clumps form. In the first 5 minutes, stir 2-3 more times to prevent clustering.
- Cover and refrigerate overnight. The pudding will set into a thick, spoonable texture by morning.
- Serve in a wide bowl topped with seasonal fresh fruit. Mango works exceptionally well with the turmeric-cardamom base.
Tip
The cloves and cardamom in this masala get sweeter as they infuse overnight. The pudding will taste more complex in the morning than it did when you made it.
